A customer said our nachos only had toppings on the top layer. How do you prevent that?
The plate looked good when it left the kitchen, but after the top layer was gone it was mostly plain chips. What changed worked for you?

We got that exact complaint. The top looked good, but once they ate the first layer it was mostly plain chips. Now I’d build it in layers and keep some chips from getting crushed too small. It takes a little longer, but the customer gets toppings all the way through.
